Strawberry Tart (raw)
In a food processor, pulse the almonds to a flour. Add the dates, vanilla extract and salt. Pulse until the mixture begins to clump together. Press firmly and evenly into a parchment paper lined 9″ springform pan. Keep aside in the refrigerator, until the cream cheese is ready. In a blender, combine the ingredients for the cream until smooth. Pour the cream over the crust and set in the refrigerator for at least 2 hours. Add the sliced strawberries just before serving.
Any seasonal fruit can be substituted – for e.g. mango, banana, peach.
Serves 5-6
