Sweet Corn Salad

Ingredients

  • 2 cups sweet corn kernels, steamed until tender
  • ½ cup diced carrots, steamed until tender
  • ½ cup diced cucumber
  • ¼ cup diced tomatoes
  • Lemon juice to taste
  • Unrefined salt to taste
  • 2 large lettuce leaves to serve

Mix all the ingredients together and serve on a bed of lettuce.
