Ingredients: 1 cup red lentils, 2 cups water, 1 onion chopped, 2 tomatoes, 1 tsp cumin, 1 tsp coriander, 1/2 tsp turmeric, 2 cups spinach, salt to taste.
Method: Cook lentils until soft. In a pan sauté onion until golden, add spices and tomatoes, cook until oil separates. Add lentils and spinach, simmer 5 minutes. Serve with brown rice.
