Beetroot Ravioli
1. Mix all the ingredients together except beetroot.
2. Slice the beetroot using a mandolin slicer. Place 8 slices on a work surface.
3. Place a tablespoon or so of the cheese mixture on each of the four slices and cover each with the other four slices.
4. Top with a small dollop of the remaining cheese and garnish with dill leaf or microgreens and serve.
